Projects are a way of organizing your content. When you are managing more than one display network, you can split your work into different units. Using projects is also helpful when you are several co-working with the same content. Each project has its own settings.
In Dise Composer, you can easily switch between the different projects from the system menu.
To edit project settings, go to the Projects tab in the Preferences. You are presented with a list of the available projects. One is called Default and will default to the current DiseContent structure. Adding or editing a project will open the Add/Edit project dialog.
